Boil rice in water, simmer with coconut milk, sugar, and butter. Add milk, vanilla extract, and cook until thickened. Stir in mashed fruit. Enjoy warm or cooled. Freezer-friendly option.

Instructions
Boil 2x amount water to rice. Add rice. Turn to low heat and cook for 20 minutes with lid on.
Add the cooked rice, coconut milk, caster sugar and butter to a and bring to simmer, stirring regularly.
Once slightly thickened add milk and the vanilla extract and stir. Bring heat to low and continue to stir for around 15 minutes.
Remove from heat and add in mashed fruit of your choice, stir. Serve warm or cooled. Also suitable for freezing.

Notes
Adjust the sweetness level by adding more or less sugar according to your taste preferences. Keep in mind that the sweetness of the fruits will also contribute to the overall flavor.
